Grilled Fish Tacos

Glad it's Friday ... how about you? I really like fish tacos, especially when the fish is grilled. This recipe is almost like a tostada though the corn tortillas aren't fried in oil.

You can also make them with small flour tortillas, which may be easier to wrap than the corn. Warm the flour tortillas briefly on the grill to soften. To make this recipe even more figure friendly, serve with fresh fruit (rather than rice and beans).

Grilled Fish Tacos

Olive oil for grilling
2 lb tilapia (or any firm white fish) cut in 1" strips
12 corn tortillas
1/4 cup low-fat mayonnaise
2 TB ketchup
1/4 cup low-fat sour cream
11/2 cups shredded red cabbage
2 large tomatoes, chopped
2 limes, cut in wedges
prepared salsa or hot sauce

Dip a paper towel in olive oil and, using tongs, brush over a clean, hot grill. Grill fish over medium heat, 2-3 minutes each side. While fish is grilling, warm a few tortillas at a time by spraying or sprinkling lightly with water and placing on the grill. Turn frequently, and remove to a kitchen towel to keep warm. In a small bowl, combine mayonnaise, ketchup and sour cream.

When fish is done, place 2 strips in each tortilla, top with shredded cabbage, chopped tomatoes and a spoonful of sauce. Serve with lime wedges and salsa.

Serves 4.
