A Monday casserole

Matisse_dinnerThis recipe comes from Cheapcooking.com but I'm starting to wonder if there is such a thing anymore. There's dairy and rice and chicken in this dish and now all that feels like you need to take out a second mortgage. Can anyone afford to cook anymore. But can we afford not to?

Anyway, I know rice prices have spiked but you must have a cup in a half in your pantry. This is a simple, delicious casserole that will feed the family adequately. Make a salad or steam some carrots to serve with.

The art is Henri Matisse's "The Dinner Table (Harmony in Red). I double Matisse ate too many Chili Chicken Casseroles but I would sure like to be invited to this dinner table.

Chili Chicken Casserole
1 cup sour cream
1/2 cup ricotta cheese
3 ounces cream cheese
3 cups cooked chicken, chopped
3 cups cooked rice
1 1/2 cups shredded Monterey Jack cheese
4 oz diced green chilies
15 oz can chopped tomatoes
15 oz can black beans (drained)
1/2 tsp. garlic salt

1 cup crushed tortilla chips

Mix together the sour cream, ricotta cheese, and cream cheese.

Add everything else except the tortilla chips and blend together. Pour into ungreased shallow 9 x 13 pan. Top with tortilla chips.

Bake at 350 for 30 minutes.

Serve 6.
