A Monday casserole
This recipe comes from Cheapcooking.com but I'm starting to wonder if there is such a thing anymore. There's dairy and rice and chicken in this dish and now all that feels like you need to take out a second mortgage. Can anyone afford to cook anymore. But can we afford not to?
Anyway, I know rice prices have spiked but you must have a cup in a half in your pantry. This is a simple, delicious casserole that will feed the family adequately. Make a salad or steam some carrots to serve with.
The art is Henri Matisse's "The Dinner Table (Harmony in Red). I double Matisse ate too many Chili Chicken Casseroles but I would sure like to be invited to this dinner table.
